Quick Turkey Salad Sandwich 1 serving
Roasted turkey breast is wonderfully low in fat, but high in flavor. Here it's spiced up with red onion and balsamic vinegar.
3/4 oz roasted turkey breast 1 Tbsp fat-free sour cream 1 tsp reduced-fat mayonnaise 1/2 Tbsp chopped red onion 1/4 tsp balsamic vinegar Pinch of salt and pepper Pinch of dried rosemary leaves, or 1/4 tsp fresh rosemary 1/2 oat bran English muffin, toasted
1. Cut the turkey into very small bite-sized pieces. Set aside. 2. In a small bowl, stir together the sour cream, mayonnaise, onion, vinegar, salt, pepper, and rosemary. Stir in the turkey. 3. Mound the mixture on an English muffin half.
