Basil Burgers (Serves 2)
½ pound extra-lean ground beef 2 tablespoons onion, finely chopped 1 clove garlic, pressed ½ teaspoon salt ¼ teaspoon pepper ¾ cup packed spinach leaves 2 beef steak tomato slices
Basil Mayonnaise 2 ¼ tablespoons low fat mayonnaise ¾ teaspoon dried basil ¾ teaspoon Dijon-style mustard
In a medium bowl, combine ground beef, onion, garlic, salt and pepper, mixing lightly but thoroughly. Shape into two oval ½ inch-thick patties. Heat a non-stick skillet over medium heat until hot. Place patties in skillet; cook for 7 to 8 minutes, or until no longer pink and juices run clear, turning once. OR, keep the kitchen cool and fire up the grill! Meanwhile, in a small bowl, combine Basil Mayonnaise ingredients; mix well. Line dinner plates with spinach and a tomato slice. Place patties on top of spinach and tomato. Top with a dollop of the mayonnaise mixture and serve.

Serving suggestions: If you wish, you could add a low carb burger bun to this meal and serve as a regular burger, or even half of a low carb bun, serving it as an open-faced sandwich. Add some steamed asparagus drizzled with fat-free Italian dressing and sprinkled with grated Parmesan cheese.
