Tuna Cakes Prep Time: 15 minutes Cook Time: 10 minutes Serves: 2
Ingredients 6 1/2 ounces tuna, canned in water 1 tablespoon chopped green onion 1/3 red bell pepper, whole 3 stalks celery, fresh 1/4 cup liquid egg substitute, fat-free 1/4 teaspoon cayenne pepper, ground 1 tablespoon margarine, canola-based, trans-fat free 2 tablespoons parmesan cheese, fat-free
Preparation 1. Drain tuna; wash and chop vegetables. Whisk egg slightly in a bowl. Add tuna, onions, bell pepper, celery, cayenne, and black pepper to taste. Mix thoroughly.
2. Heat margarine in a large non-stick skillet until melted and hot. Form tuna mixture into 4 cakes and place in skillet, cooking for 3 minutes per side.
3. During the last minute, top each tuna cake with 1-1/2 teaspoons of Parmesan cheese. Serve immediately with raw vegetables, such as baby carrots, bell pepper strips and celery sticks, if desired.
