Barbo's Breakfast Frittata for One
Frittata 1 potato patty, do not defrost-(1P) 70 cal. 1 egg, plus one egg white, 2 tsp. water (whipped up and set aside) red onion, minced, to taste butter flavored Pam spray 1 tsp. xtra virgin olive oil or your choice of oil salsa fat free sour cream
Method: Using a small skillet, heat and then spray the pan and the potato on each side. Brown on each side. Get the potato to the point where it can then be cut with the edge of the spatula, then add 1 tsp. oil, the onions and stir until it is all cooked and the potatoes are nicely browned. Add the egg and let it set up for a minute, turn it over and let it cook another minute. Place a plate over the skillet, turn it upside down over your plate and voila you have a gorgeous frittata. Now garnish with salsa and sour cream.
Serve with a nice glass of V-8 juice, cup of coffee and you have a big breakfast for 4 measly points.
****HINT:Ore Ida Frozen Potato Patty Bring a box of these patties home, partially defrost in microwave just until you can separate the patties. Wrap each one in a sandwich bag and stuff back into the box. Now you have eight patties to work with. These are shredded and formed, but not cooked.
