Egg and Veggie Omelette
Ingredients: 1/4 cup chopped fresh tomato 1/4 cup chopped yellow squash 1 tablespoon chopped onion Paprika to taste (optional) Mrs. Dash to taste (optional) 1 slice of "light" processed cheese, cut into bite-size pieces 1 beaten egg white
Directions: Combine tomato, squash, onion and seasonings in small microwavable bowl. Cover with a paper towel. Microwave 20 seconds on high. Stir in cheese and beaten egg white. Cover with paper towel and microwave 20 to 30 seconds, until egg white is thoroughly cooked. Serve immediately.
