Crab Wraps (Serves 2)
1/2 pound crabmeat (King, Snow, Dungeness) fresh, frozen or canned 2 ounces cream cheese, diced 2 cups mixed baby lettuces 1/2 cup tomato, diced 2 slices bacon, cooked 1/4 cup low fat mayonnaise 3/4 teaspoon fresh dillweed, chopped 2 large Romaine lettuce leaves
Mix the dill and mayonnaise together in a bowl. Place crab meat and cream cheese in a skillet; warm over medium until crab is warm and cheese starts to melt. Lay out the Romaine lettuce leaves and spread 1 ounce of the dill mayonnaise mixture over each. Top each with 1/2 of the crab and cream cheese mixture, 1 cup of the mixed lettuces, 1/4 cup diced tomato and 1 slice of bacon, lightly chopped. Roll up like a cigar and serve.
