EGGS BENEDICT BREAKFAST CUPS FOR TWO
Cooking for Two...Winter Issue 2005-06 Prep: 15 mins Bake: 20 mins
2 slices white bread 1/3 cup reduced fat shredded cheddar cheese 1 green onion, chopped 2 slices Canadian bacon, finely chopped{or ham} 1/4 tsp. garlic powder 1/4 tsp. minced fresh basil 2 beaten eggs{or egg substitute} 2 tbsp. light butter 2 Tbsp. PLUS 2 tsp. Hollandaise sauce mix 1/2 cup water
Coat two 8 oz ramekins or custard cups with non-stick cooking spray; line each with a slice of bread. Layer with the cheese, onion, bacon, garlic powder and basil. Pour eggs into cups. Place cups on a baking sheet & bake for 20-25 minutes at 350°F In a small saucepan, melt the butter. Whisk in the sauce mix; gradually stir in the water. Bring to a boil; cook & stir for one minute or until thickened. Gently remove bread cups to serving plates; top with the Holladaise sauce.
