Breaded Veal Cutlets Prep Time: 10 min ; Start to Finish: 25 min Makes: 2 servings A classic is scaled for two, ready in less than 30 minutes.
1 egg 1/3 cup Progresso(r) plain bread crumbs 2 veal cutlets (3 oz each) 1 tablespoon vegetable oil 1 can (8 oz) tomato sauce 1/2 teaspoon Italian seasoning 1/2 cup shredded mozzarella cheese (2 oz)
1. In shallow bowl, beat egg with fork. In shallow dish, place bread crumbs. Dip each veal cutlet into egg; coat with bread crumbs.
2. In 8-inch nonstick skillet, heat oil over medium-high heat. Add veal; cook on both sides until browned.
3. Reduce heat to low; stir in tomato sauce and Italian seasoning. Cover; simmer 12 to 15 minutes or until veal is tender. Sprinkle with cheese; cover and cook 1 to 2 minutes longer or until cheese is melted.
High Altitude (3500-6500 ft):In step 3, reduce heat to medium-low.
Tip Shrink the ingredient list by using Progresso(r) Italian style or Parmesan bread crumbs and omitting the Italian seasoning.
