From Cousin Ann: Greek Potato Salad I think this is healthier than the potato salad I’ve always known and dearly loved. I think it’s quite delicious. A version of Greek Potato Salad Greek Potato Salad 2 whole green onions, finely chopped juice on one lemon *1 tsp. olive oil (about 1 tsp. per potato) parsley, finely chopped pinch of black pepper pinch of salt 2 potatoes 1 Tbsp. vinegar capers (optional) Boil the potatoes in salted water with a little vinegar for 20-50 minutes. Remove the potato skins and cut into slices. Combine the potatoes, green onions, onion, parsley, salad and pepper in a salad bowl. Beat together the olive oil and vinegar and pour over the salad. Serve on lettuce leaves *Because I believe that olive oil is good for our bodies, I would recommend using 1/2 to 1 tsp. per serving. barbo Olives would be good with this. Practice safe eating -- always use condiments.
