Barbo's WW Crockpot Spicy Apple Tapioca Dessert* 6 servings 1 point each made with Splenda
6 large Gala apples peeled, cored, sliced or coarsely chopped 1 c. Splenda 2 teaspoons cinnamon 1/2 teaspoon salt 3 tablespoons Minute Tapioca (leave out for CORE) 2 tablespoons lemon juice 2 tbs. vanilla 1 cup boiling water
Mix sliced apples with sugar, cinnamon, salt and tapioca until evenly coated. Put mixture in crockpot. Pour lemon juice over apples and THEN add boiling water. Cook on high for about an hour. 6 servings using all Splenda @ 1 Point {72 calories, 2.8 grams fiber, 0.3 grams fat}

A good CORE thickner would be guar gum or arrowroot flour. I use guar gum all the time & love it!

I used a lot of stuff sold as bioguar many years back --> that was just incredible. It dissolved like a dream, and was practically tasteless too. You could turn a cup of nonfat milk into into six cups of firmly whipped cream. Never mind that it was all air --> that you would ultimately burp enough wind to blow a sailboat from L. A. to Catalina --> the richness and the mouth feel were right there, and right on target. Now that I'm cooking more again, went out and bought some guar gum from a local health foods store recently. It it was so awful, I immediately threw it out. My old pusher from years ago (a middleman processing lab up in Santa Barbara) has since disappeared. I need a good recommendation and source, so I can stock up again.

Lily, I buy my guar gum in a healthy food store & love it. You only need a wee bit to thicken. I have made fruit syrups from fresh fruit that I cooked down & strained & it was glossy , thick & delicious! I prefer it over cornstarch. As to what food grade it is, I have no idea. I bought this when I was on low carb.

That's funny...the recipe I have for your Spicy Apples (got it from the Weight Watcher's forum) also has 3 tbsp sf ff butterscotch pudding mix...gives it a caramel flavor, very good on oatmeal.
