Barbo's Low as You Go Potato Salad WW
*Makes 6 - 1c. Servings @ 2P each cup
Place the following ingredients into a large mixing bowl:
1- 14 oz. unpeeled potato cooked in microwave came to 2 c. 4P 2 Hard cooked eggs, sliced, 4P 1 medium very fresh cauliflower, cored and nuked until
soft/crisp. Cooled and well drained and separated in to potato
size chunks. -0-P 1/2 c. red onion, finely diced -0-P 2 large celery hearts, sliced very thin -0-P 3 tbs. dill relish -0-P 2 tbs. sf sweet relish -0-P 1/2 tsp. salt 1/2 tsp. black pepper 1/2 tsp. onion powder 6 large black olives sliced and set aside for top. 1P
Dressing: 1/4 c. ff mayo 1P 2 tbs. lite mayo 2P 2-3 tbs. yellow mustard 1 pkg. sugar sub Mix together and toss with potato mixture until moistened Top with 6 sliced black olives
Chill until flavors are all marinated, about 4 hours.
For a good lunch, add one hard boiled egg for a big 4P lunch.
