:DHurry Curry Yellow 2 c. thinly sliced potatoes 2 hard cooked eggs, sliced 1- 12 oz can of chicken 1 can Campbell's Cream of Potato soup (Healthy Choice is good) *I used cream of chicken/mushroom 1 tbs. favorite curry powder 1/2 c. water or milk Spray 9" pan with Pam, arrange layers as follows: 1 c. potatoes, egg slices, chicken and last cup of potatoes. Blend soup, water and curry powder, pour over casserole and bake uncovered 375 for 1 hour. Six servings
This can be made in a skillet with lid. I have used fresh chicken mostly I think the addition of thin onion rings sauteed lightly is very good I've used little red potatoes sliced (very pretty) I've left out the eggs at times You can make your own 'creamed' sauce for points I like to keep the few points for canned sauces as it's quicker. Points for the soup for six servings is very low. I like to garnish with cilantro If you want to serve it over rice you can delete the potato, but the potato is very good in this.
This is a WW recipe but I don't have the points. I use it for CORE and just count the soup points. I hope that some of you who like curry will enjoy this. Serve with some chutney.
