TNT My Mushroom Barley Pilaf. Barbo 1 1/4 c. pearled barley 2 1/2 c. chicken broth salt and pepper to taste Steam this until done. Off heat and set aside with lid on
1 pound of mushrooms, wipe off, leave ends on 1 large onion, coarse chop 4 whole garlic cloves 1 tbs. evoo 1 tbs. butter or margarine (this totals 6 fats)
Saute mushrooms until nice and brown on both sides, Throw this in food processor. Butter Pam spray skillet and saute the onion and garlic until onion is clear, throw this into processor. Now hand pulse until everything is chopped, remember you want it to look about the size of the barley. Now dump this into the barley and mix well.
You now have a huge amount of delicious mushroom barley. It freezes well in 1 c. containers and it goes with anything that is meaty. I even like it with cottage cheese and sliced tomatoes for my lunch.
It makes a very large amount so I think you probably get 1/2 fat per 3/4 to 1 c. serving. for Core
