Mustardy Pork and Leeks
Low fat cooking spray salt and pepper 1 x 150g pork loin steak 1 leek trimmed 100ml pork or chicken stock 2 tsps grain mustard 1 tbsp extra low fat soft cheese 1 tbsp very low fat fromage frais
Lightly coat a non stick frying pan with cooking spray. Season pork steak, add to hot pan and press down well. Fry for 4 mins, turn over and scatter leek into the pan around the pork steak. Cook for further 4 mins stirring leek occasionally. Pour in the stock and add the mustard, then bubble the sauce rapidly for 2 mins. Remove the pan from the heat and stir in first the soft cheese and then the fromage frais to enrich the sauce. Adjust seasoning if needed before serving.
THIS RECIPE SERVES ONE PERSON and is totally core!! I love it!! xx enjoy!!
