Barbo's Nachos Grande TNT Other than the one oz. of real big tortilla chips, it is a Core recipe. I am showing you one serving: I already had made a pot of pinto beans (that's one of those things that is so handy to have on hand as so much can be done with them) The other thing I keep in the cupboard is at CostCo. they have cans of very lean beef and I think there are four of them to a pkg. I just heat them up in a pan including the juices and run a large clove of cut up garlic and a bit of black pepper and let it simmer for about 5 minutes kinda shredding the meat. I use Pace Picante, mild, but any favorite salsa will do I use Mexican blend cheese. shredded and lite if possible? Me no likee fat free cheese Cut up a tomato in med chunks If you have an avocado, use 1/4 for your serving. Bottom of plate: One oz. of your favorite taco chips. Place a serving of hot pinto beans and a serving of hot meat Top with cheese & salsa Place in microwave for 1 minute 20 seconds or until cheese is nice and melted. Surround the plate with tomatoes and avocado. Top with light or ff sour cream. Now eat and enjoy without guilt. The points are in the chips
