Avocado Shrimp/Crab Delight Riley, Carol’s DIL Cut 3 ripe avocados in half, remove pits & scoop the pulp into a bowl. Save the shells. Mash the pulp as fine or as coarse as you like, squeeze the juice of a small lemon or lime over top & stir in. Season with pepper & fresh minced garlic if desired. Stir in cooked salad shrimp &/or crab meat {as much as you like}, chopped tomatoes & diced red onion. Spoon mixture into the reserved shells. Chill for approximately 1 hour. Serve with the meal or as an appetizer. Serves 6
