Barbo's Low Carb Crepes.
These were so nice and can be filled with something sweet or can be made into blintzes, cannellonis or enchiladas. It made a great wrapper. Here is the recipe:
Crepes: Makes five serves 2 2 x-lg. eggs 2 tbs. heavy cream 2 tbs. water 1 heaping tbs. CARBOLITE (found at Netrition.com)
Beat until mixed, but don't overbeat.
Heat your small non-stick skillet and get it hot. Turn heat down and put just a dab of butter in skillet Using 1/4 c. measure, just bring the batter 3/4 way up. Place in skillet and roll the batter around and around and then let it cook on one side. Meanwhile right next to it have another non-stick skillet heated to warm. When the bubbles are gone and your non-stick spatula can go around and under it, turn it into you other warming skillet. Place wax paper down and plop it onto the paper. Continue doing this until all five crepes are made, putting wax paper between them.
They are delicious and very low carb.
Fillings: Go for it. I wanted something sweet, so I put 2 tsp. low fat cream cheese in and spread it around and then put one heaping tsp. of sugar free seedless black berry jam and rolled them up. Hmmmmmmm good. I want to cook some turkey burger and season it up and roll it up in the crepe and think of a good sauce to put on them with a sprinkle of cheese and bake them for dinner with good green beans, and sliced tomato.
