Spinach and Mushroom Salad
Recipe By : Carol Williams Serving Size : 8 10 ounces fresh spinach -- washed & chopped 10 fresh mushrooms -- sliced
4 large eggs -- hard cooked,chopped
6 slices bacon -- cooked & crumbled
1 cup olive oil
1/4 cup red wine vinegar
1/2 teaspoon dry mustard
1 tablespoon Splenda
1 teaspoon salt
1/4 teaspoon black pepper
-Toss spinach, mushrooms, chopped egg, and crumbled bacon. - Whisk remaining ingredients together. -Toss with vegetables to coat spinach. -Carb count per serving:2.9 minus 1 gram fiber= 1.9 carbs
