Chicken Fajita Casserole-Sort Of

1 tablespoon olive oil 1 pound chicken breast halves without skin -- boned,cut in strips 1 teaspoon taco seasoning mix 1/4 teaspoon salt 1/2 teaspoon garlic powder 1 cup onions -- thinly sliced 1 cup red bell pepper -- thin strips 1/2 cup Carol's Salsa -- or your own choice 5 ounces Monterey jack cheese -- shredded
-In skillet, in hot oil brown the chicken strips. -Stir in taco seasoning, garlic powder & salt. -Add onions & bell peppers; cook & stir till vegetables are crisp-tender;about 1 minute. -Pour into a greased casserole,smooth then spoon on salsa & sprinkle on the jack cheese. -Bake @ 350* until cheese is melted. -4 servings @7 minus 1.7 gr. fiber= 5.3 carbs & 30.7 gr. protein -***** may be used in low carb tortillas, Barbo's Thins rolled up or made as a pizza using the tortilla.
