Chicken Salad Hunan

Chicken Salad Hunan Low Carb
Recipe By Barbo :
Serving Size : 4
Dressing: (I like to double the dressing)
3 tablespoons peanut butter
3 tablespoons soy sauce
2 tablespoons white vinegar
1 package Splenda or Equal
1 teaspoon green onion
1 teaspoon ginger root slice
1 tablespoon garlic cloves -- chopped
1 teaspoon hot pepper oil
2 teaspoon sesame oil
4 whole chicken breast halves without skin -- or use thighs
Or cut up roasted chicken that is already cooked (my favorite)
4 cups lettuce, iceberg or romaine hearts -- shredded
Cucumbers sliced thin
Green onion, sliced thin
Sprinkling of roasted sesame seeds for topping
Oranges sliced thin as garnish (optional)
6.4 grams carb. minus 1.7 for fiber=4.7 grams Carb.
Oranges not counted in
If you have a roasted chicken from CostCo you could
Just take the meat off the bones and slice.
If you have chicken breast, boned and skinned you
Could just saut� until the pink leaves the center then
Slice thin
In a blender combine dressing ingredients in order given.
Arrange chicken on a bed of shredded lettuce, add cukes,
Pour sauce over chicken and sprinkle with toasted sesame seeds
And arrange orange slices.
