Pina Colada Squares
Recipe By : Carol Williams Serving Size : 14
1/3 cup cold butter -- cubed
3/4 cup ground almonds
1/4 cup Atkins Bake Mix --or bake mix of your choice
1 tablespoon unsweetened coconut
2 tablespoons splenda
Topping
8 ounces light cream cheese -- softened
2 X-large eggs
3 tablespoons sour cream
1/2 cup splenda
1/4 teaspoon coconut extract
1 teaspoon pineapple extract
1/2 teaspoon vanilla -- see note*

-Preheat oven to 350*F -Prepare crust:add dry ingredients to bowl; cut in the butter with a pastry blender or with your fingers till butter is incorporated. -Spray an 11x7 or 9" square pan with cooking spray.{Spray the bottom very well}. -Pat the crust mixture evenly on to the bottom of the pan, set aside. -Prepare topping: put the cream cheese in a bowl & beat until fluffy. -Add the eggs,splenda, sour cream & extracts, beat well. -Pour onto the prepared crust & bake for25 to 35 minutes or until edges turn a light brown & filling is firm in the center.Do not overbake as it drys it out. -Cool on a wire rack, chill, then cut into desired number of squares. -12 squares @4.3 minus 0.8 gr. fiber= 3.5 carbs each & 5.3 gr. protein -14 squares @3.7 minus 0.7 gr. fiber= 3 carbs each & 4.6 gr. protein -* The flavorings could be adjusted to your own taste.It smells heavenly while it is baking! -**I test at 25 minutes & then a couple of times in the remaining time.
