Lowcarb Spiedies
A marinade for grilled meat and veggies. I don't know the full history behind "spiedie" marinades, but I know that they're a regional sort of thing in New York. It's Italian in origin, where "Spiedie" means "skewer" in a local Italian dialect, and they're often eaten as a type of sandwich (the lowcarb version, of course, is sans bread).
5 lbs of cubed meat (beef, chicken, turkey, pork, lamb, or venison)
1 cup olive oil
1/4 cup peanut oil
1 cup cider vinegar
2 Tbsp lemon juice
2 tsp salt, to taste
1 tsp black pepper, ground
1 small red onion, chopped
8 cloves garlic, crushed and minced
3 Tbsp fresh parsley, chopped
2 tsp dried oregano
1-2 bay leaves
1 tsp dried basil
1 tsp dried mint (spearmint preferred)
1 tsp rosemary
1/2 tsp marjoram
1/4 tsp cayenne pepper
1/4 tsp fennel seeds
1/4 tsp caraway seeds
1/2 tsp Splenda
Mix together all ingredients in a large bowl. Cut the meat into 1 to 1-1/2 inch cubes and mix together with marinade. Place mix into a plastic container large enough to accommodate both meat and marinade with a bit of room left over. Refrigerate, marinating for between 4 hours to 2 days, turning the meat occasionally.
Skewer the meat pieces fairly tightly against each other on metal or bamboo skewers to preserve moisture and tenderness during grilling. You may add whatever vegetables you like (onion, turnip chunks, mushrooms, cherry tomatoes, cauliflower, green pepper, etc, whatever your lowcarb diet allows), although spiedie affectionados will probably frown at you. Grill 12 to 15 minutes over hot coals until done, turning frequently.
Spiedies are not usually eaten with an additional sauce. However, for those who want one there is an acceptable sauce you can try. For one serving of the sauce, mix together: 1 Tbsp crumbled bleu cheese, 1 tsp mayo, and 1/2 tsp prepared horseradish. It's sharp and tasty.
Eaten together with a big salad and veggies, spiedies make a great lowcarb BBQ meal. (Those eating high-carb can serve them on Italian bread by grasping and wrapping the spiedie with the bread and pulling the skewer out, leaving the bread with the spiedies on it.)
