Low Carb Pasta From CarolynF tweaked by me.
The dough was placed in the Cuisinart 1 c. Carbalose 1/4 tsp. salt 1/4 tsp. black pepper 1 extra large or jumbo egg 1 tbs. olive oil 1 tbs. water and a little standing by if needed and I did.
Use the metal blade and place everything dry in the Cuisinart and blend it. Then add the liquids and let it spin, if it does not ball up then you need to add more liquid. When it became a ball I let it go for a minute more. Place onto a 'floured' board and knead by hand until you think it's smooth and satiny. Divide into 4ths. and let dough rest about 8 minutes covered.
With hand crank pasta maker, take one fourth and shape it into a slim rather flat piece that will fit into #2 slot, run it through, then once through 3-4-5. It will be nice and thin. Now if you wish you can run it through the shapes cutter, ie, fettuccini or spaghetti.. I dropped the noodles into chicken broth and cooked them for 10 minutes. They were thin and tasty. DH and I feel that we now have home made pasta. Next time I will get out my pasta dryer and we will make a bunch ahead and dry it, bag it and voila! Instant pasta.
