These were Linda Sue's but I tweaked them to be more stable and user friendly.
Low Carb Light Crepes TNT Makes 14 crepes In a blender place these ingredients: 5 large eggs 1/2 c. heavy cream 1/2 c. LC milk 1/4 c. water 3 tbs. melted butter 1 tbs. light olive oil 1 c. Carbalose flour 1/4 tsp. salt Blend until very smooth and well mixed. Let batter rest about 5-10 min. Whirl again right before making the crepes. Have on hand 15 pieces of waxed paper, a paper plate for stacking them on. Butter Pam. 1 8" non-stick skillet, 1/4 c. measure cup. Heat the skillet, spray with Pam, place a scant 1/4 c. batter into the skillet whirling until all batter has gone around the pan and has stopped moving. Spray with a bit of Pam. Let cook a minute or so, then lift gently with a very thin long spreader and turn over. Immediately spray again lightly and count to 10. Flip it onto your waxed paper which is on the plate. Spray lightly again. Cover with another waxed paper and continue until they are all made. I put some cream cheese in two of them with SF strawberry jam and rolled them up. Didn't bother frying them in butter as I usually do blintzes. Oh they were so good. I am hoping that they will freeze as my usual crepes do. I can't wait to have some with a creamy meat filling, or just make blintzes with ricotta and topped with strawberry and sour cream.
