TNT Low Carb Bean Soup with Ham Almost like Senate Bean Soup
Large soup kettle: Fill with about 2/3 full of water 2 big ham hocks (we get them from Honey Baked Ham Store) 1 tbs. Ham Base (optional) 1 tbs. light olive oil 3 oz. onion, chopped 2 cloves garlic, chopped 2 c. celery, chopped 8 oz. fresh green beans 3 oz. of shredded carrots Onion Powder Kosher salt to taste Xanthum Gum Freshly ground black pepper to taste 3 cans of *organic soybeans, including liquid (21 grams carb) 14 oz. cauliflower, cut into nice chunks (goes in last)
Sauté onion, garlic and celery in oil. Add to soup pot along with water and ham. Add soybean with their juice & ham base. Cook for about an hour or at least until the ham is coming off the bone. When the ham hocks are very tender, remove them and take off the meat and throw away the fatty skin. Add it back to the pot. Now add green beans, shredded carrot and cook for another ¾ hour. Add cauliflower and taste for seasonings. Cook uncovered until the cauliflower is done. Right at the end I used Xanthan gum, sprinkling it in and stirring until it was the right thickness. *I found these in the .99 stores. Libby Co. cans them and they are light in color and reminded me of the taste of Navy beans. They were tenderer than the black soybeans. I bought 20 cans of them and I might go back and get more. We have never seen these beans in regular super markets, or anywhere for that matter. Each can = 7 grams carb. I cannot wait to make ‘baked beans’ with them.
