TNT Barbo's Stuffed Portabello Mushrooms
Barbo’s Stuffed Portabella’s
4 large mushrooms White sauce 1 lb. crabmeat (from Costco. Or Trader’s Dijon mustard Parmesano/Reggiano cheese, grated Breadcrumb and cheese for topping Paprika
Rub EVOO on back of the mushroom, remove stem end. Grill on BBQ just until you have nice grill marks.
Make white sauce; add crab, mustard and cheese to taste. Mix well. Stuff mixture inside each mushroom and top with crumbs. Broil just until topping is crisp.
Plating: Large bowl with Romaine hearts, quartered tomato for garnish and avocado that has been liberally sprinkled with lemon juice. Coarse ground pepper and a little salt
Use any left over stuffing for pasta next day.
