OK--this is my favorite snack lately:
Take the biggest head of garlic you can find and cut off the top 1/4 or 1/3, spray exposed garlic with Pam, or take a dab of oil and smear it on. Loosely wrap in foil and toss into oven (in my case I use the little toaster oven) for 45 minutes at 400 degrees or until soft.
That's the roasted garlic which you can use as a spread or toss with tomatoes and pasta, etc etc. In this case I use it all for the hummus which follows:
Into food processor dump:
2 cans drained garbanzo beans (chick peas)--I think they're around 14 oz each Juice from 1 large lemon 1/2 tsp cumin 6 Tablespoons tahini (ground sesame) 1/2 tsp or slightly less salt squeeze the entire head of roasted garlic till all the cloves pop out into the processor Process until smooth--add in water to thin if needed--I usually need about 6-8 tablespoons.
