CAROL'S DATE NUT LOAF
1 c chopped dates
1 tsp baking soda
3/4 c boiling water
1 lg egg
3/4 c light brown sugar
1 tbsp light butter -- melted
1 tsp vanilla
1 1/2 c all-purpose flour -- +1/2 tsp. salt
1 tsp baking powder
1/2 c chopped pecans -- optional
Preheat oven to 325°
Pam Spray an 8" loaf pan; set aside.
Place the chopped dates & the baking soda in a bowl. Pour boiling water over top, mix & set aside to cool.
Mix flour, salt & baking powder, sift into a small bowl.
In a larger bowl, beat the egg until light & pale yellow in color.
Gradually add the brown sugar, beating well after each addition. Stir in vanilla.
Add the cooled date mixture, mix well.
Stir melted butter & the flour; mix well.
Fold in the chopped nuts.
Pour into prepared pan & bake approximately 1 hour. Test with a toothpick after 45 minutes.Remove from oven & cool for 10 minutes on a wire rack.Remove from pan & continue cooling.
Freezes well.

NOTES: This is an old recipe that Mom used to make as far back as I can remember. It is a very moist & delicious sweet bread. She got the recipe from her aunt so it goes back to maybe the 1930's but I can't say for sure.Mom had written the recipe on the back inside cover of a very old cookbook. I changed the recipe slightly to our more modern ingredients but it's basically the original recipe.
The oven temperature said 300°- 325° for 1 1/4 hours but I put it to 325° and reduced the baking time to an hour. Mine baked in about 48 minutes.
