Applesauce Gingerbread
1 1/2 cups unbleached flour 1 cup whole wheat flour 2/3 cup sugar 2 1/2 tsp. baking soda 1 tsp. ginger 1 tsp. cinnamon 1 tsp. ground allspice 1 1/2 cups unsweetened applesauce 1 cup molasses 3 egg whites, lightly beaten 1 1/2 cups light whipped topping
1. In a large bowl, combine the flours, sugar, baking soda & spices, stir to mix well.Add the applesauce, molasses & egg whites, stir to mix well.
2. Pam spray a 9x13 inch pan, pour in the batter & spread evenly. Bake at 325° for 40 mins or just until a wooden toothpick inserted in the center, comes out clean.
3. Cool the cake to room temperature, cut into squares & serve, topping each serving with a dollop of light whipped topping.
Serves 16
