CAROL'S GINGERBREAD SQUARES
Recipe By :Carol Williams{remake of a similar recipe}
Serving Size : 20
1 1/2 cups whole wheat flour
1 cup all-purpose flour
1/3 cup Splenda® Brown Sugar Blend -- or use Splenda Granular
2 1/2 teaspoons baking soda
1 teaspoon ginger
1 teaspoon cinnamon
1 teaspoon ground allspice
1 1/2 cups unsweetened applesauce
1 cup molasses
2 large eggs
1/2 teaspoon salt
Cinnamon-Cream Cheese Topping{optional}Recipe Below
In a large bowl, combine the flours, sugar, baking soda & spices, stir to mix well.Add the applesauce, molasses & eggs, stir to mix well.
Pam spray a 9x13 inch pan, pour in the batter & spread evenly. Bake at 325° for 40 mins or just until a wooden toothpick inserted in the center, comes out clean.
Cool the cake to room temperature, cut into squares & serve, topping each serving with a dollop of Cinnamon Cream Cheese Topping if desired.

1/4 cup whipped light cream cheese

1/2 teaspoon cinnamon
2 tsp. Brown Sugar Splenda Blend or Splenda Granular
Beat cream cheese, sugar & cinnamon until smooth,
Fold in the cool whip.
Serve on the Applesauce Gingerbread.
