CAROL'S BROWNIE BITES
Recipe By :Carol Williams
1 1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 tsp. salt
1/2 cup unsweetened applesauce
1/2 cup light butter
1 cup cocoa
1 cup Splenda Sugar Blend for Baking
4 large eggs -- slightly beaten
1 1/2 teaspoons vanilla
Preheat oven to 350°
Spray ONLY the bottoms of 30-2" mini muffin cups or a 9x13 inch pan.
In a large pot or a microwaveable bowl, melt the butter.
Stir in the applesauce, cocoa, mixing well.
Beat in the eggs, then the sugar blend & vanilla.
Stir in the flour, baking powder & salt. Mix well.
Pour into prepared cups or pan.
Bake for 12-15 minutes for the Bites or 30-35 minutes for brownies, ....test with a toothpick.
Underbake slightly for a fudgy brownie.
Serves: 30 Bites @ 2 Pts. each OR 24 brownie squares

Per Serving (excluding unknown items): 113 Calories; 3g Fat (26.5% calories from fat); 3g Protein; 18g Carbohydrate; 1g Dietary Fiber; 38mg Cholesterol; 54mg Sodium. Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 0 Fruit; 1/2 Fat; 0 Other Carbohydrates.
NOTES: These are very sweet so the sugar blend could be cut back to 2/3 cup or even 1/2 cup, depending on how sweet you like your baking.
If you prefer to use plain Splenda Granular you would use 1 1/2 cups.
For a nice flavor, stir 1 Tbsp. instant coffee granules with the cocoa.
