I found this recipe on the Boot Camp Buddies WW board. I made 24 mini muffins. It's a quick recipe to throw together.
BANANA BREAD
1 1/2 cups all-purpose flour 3/4 cup sugar 1 1/4 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon cinnamon 2 large egg whites 1 cup mashed banana 1/4 cup applesauce, unsweetened
1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan. 2 In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan. 3 Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

My changes *I made 24 mini muffins....rates a 5 out of 5 ** The mini muffins took about 14 minutes to bake...check at 10 minutes to be sure not to overbake...Carol
