Bread Pudding.
Warming spices and succulent fruit make this classic British pudding extra special.
Makes 12 squares.
Ingredients.
500gr day old bread cut into thick slices. I used semolina bread. 568ml skimmed milk. 75 gr raisins, 75gr currants. I used 150 gr mixed fruit. grated zest of 1 lemon 150gr demerara sugar. I used 1/2 the amount with splenda. 2 tsp ground mixed spice 2 medium eggs.
Method.
Place the bread in a large mixing bowl. Pour half the milk over the bread and leave to stand for at least 1 hr preferably longer. Preheat the oven to 150 c gas mark 2. Grease and line the base of a 2 cm deep square tin.
Add the fruit,lemon zest, 125g of sugar, mixed spice, eggs and the rest of the milk to the soaked bread. Mix well to combine. I find the hands work best for this.
Pour the mixture into the prepared tin and level the surface. place in oven and cook for 1 1/2 hrs or until golden and springy.
Remove from oven and sprinkle the remaining sugar over the top. cool a little then cut into 12 squares and serve warm.
Cooks tip.. Bread pudding freezes very well. wrap well in clingfilm before placing in freezer.
