CAROL'S DOUBLE BRAN BANANA DATE MUFFINS
Recipe By : ~CAROL~spinoff from a recipe found online.
Serving Size : 16
2 cups skim milk
4 tbsp white vinegar
3 cups Post 100% Bran® Cereal
1 cup oat bran
1 1/3 cups whole wheat flour
2 tsp baking soda
3 tsp apple pie spice
1 tsp salt
3/4 cup Splenda Granular
1 cup unsweetened applesauce
3 medium bananas -- pureed
2 large eggs -- lightly beaten
1 1/2 tbsp orange zest
5 oz chopped dates
Preheat oven to 375°
-Place 16 jumbo cupcake papers in the wells of 16 Texas sized muffin tins. Spray the inside of the papers for ease in removing. OR just Pam spray the muffin tins.I used 2 mini loaf pans for the remaining batter to make the 16 muffins. I cut each loaf in half.
-Pour the milk into a large mixing bowl; stir in the vinegar. Let sit for 5 minutes to sour.
-In a small bowl, puree the bananas, stir in the applesauce,Splenda Granular & the eggs .Add to the cereal mixture stirring well to combine.Let sit for 40 minutes to really soften the cereal.
-Meanwhile, mix together the dry ingredients, set aside.
-Add the dry ingredients & fold only until the flour is incorporated.
-Bake for 18-20 minutes or until a toothpick inserted in muffin comes out clean.
-Remove from pans & let cool. Wrap individually & freeze or store in the fridge.
16 Texas sized muffins @ 2 Points each
24 regular sized muffins @ 1 Point each
Points are calculated on the Weight Watcher's Electronic calculator.
VARIATION: Stir in 1 cup chopped apples or 1 cup finely grated carrots.
NOTE: you can also use regular muffin tins.....fill 3/4 full of batter. Results should show a nice domed or peaked top.
