BANANA BREAD PIE
2 medium bananas -- mashed
1 large egg
2 large egg whites
1/2 cup Reduced fat Bisquick®
1 1/3 cups SF-FF Sweetened Condensed Milk -- homemade
1 tsp vanilla
1 Tbsp light butter -- melted
2 tbsp chopped pecans
Instructions
Preheat oven to 400 degrees.
Coat a 9" pie plate with nonstick cooking spray; set aside.
Place all ingredients in a large mixing bowl and beat on low speed until well-blended, 1-2 minutes.
Scrape batter with a rubber spatula into prepared pie plate and smooth top.
Bake until pie is well caramelized on top and firm around the edge, but still a little soft in the center, 25-30 minutes. Remove pie from oven and let it rest for 30 minutes before slicing.
Serve it warm with vanilla ice cream or chilled with Cool Whip.
Store pie covered in plastic wrap at room temperature for one day, or in the refrigerator for up to 4 days.
*NOTE: 2 Tbsp chopped pecans can be stirred into the batter before baking. Points remain at 2 for 6 servings.OR: for 8 servings, stir in 1/4 cup chopped pecans for 2 Pts per slice.
This is a very rich and filling dessert.

SUGAR FREE-FAT FREE SWEETENED CONDENSED MILK

1 1/3 cups Pacific Skim Milk Powder
1/2 cup cold water
STIR IN:
1/2 c Splenda Granular
Mix the milk powder & water together
Microwave on HIGH until mixture is HOT but NOT boiling.
Stir in the Splenda Granular.
Cover & chill for 4 hours.
NOTE: the longer it chills the thicker it gets.
Whole recipe: 3 Points{169.3 calories, 0.3 gr. fat, 0 gr. fiber, 11.9 gr. protein}
