CAROL'S LEMON-CHEESECAKE LAYER PIE
2 pkgs sugar free-fat free instant pudding mix -- cheesecake & lemon 1 1/3 cups dry skim milk -- divided 2 1/2 cups cold water -- divided 3/4 cup 95% Fat Free Cool Whip{fat free Cool Whip in the U.S.} 1 Keebler Shortbread Pie Crust
In a small bowl, mix the cheesecake pudding mix, 2/3 cup of dry skim milk. Add 1 1/4 cups water, mix with a wire whisk until smooth & slightly thickened. Spoon into the prepared crust. In another bowl, mix the lemon pudding mix with the remaining 2/3 cup dry skim milk. Add the remaining 1 1/4 cups water, mix with wire whisk until smooth & slightly thickened. Spoon this on top of the cheescake pudding layer. Spread the Cool Whip over the entire pie making little peaks with a spatula to resemble meringue. Chill for at least 2 hours.
Slice into 8 servings.
