MOM'S FLAPPER PIE
Recipe By : Carol's Mom{revised from an old family recipe} Serving Size : 6
PIE CRUST 1 1/4 c graham cracker crumbs 2 tbsp brown sugar 1/4 cup light butter -- melted
FILLING 1/2 c sugar -- divided 2 tbsp cornstarch -- heaping 2 lg eggs -- seperated 1/2 tsp vanilla dash salt 2 c 1% milk
Prepare pie crust, reserving 2 Tbsp. for topping. Press remaining crumbs into a Pam sprayed 9 inch pie plate Bake at 350 degrees for 15 minutes or until a golden brown. Remove from oven & cool. FILLING: Heat milk in a medium size saucepan over medium low heat. In a small bowl combine the sugar{all but 2 Tbsp}, egg yolks & cornstarch. Slowly pour this mixture into the hot milk, whisking constantly so no lumps form.Cook & stir until thickened. Pour filling mixture into prepared pie shell. Beat the egg whites and the reserved 2 Tbsp. sugar until stiff peaks form. Spread over pie filling or drop in mounds. Sprinkle on the reserved 2 Tbsp. crumbs. Return pie to oven & bake until the meringue just starts to brown. Remove from oven, cool & then chill until ready to serve.
