IMPOSSIBLE COCONUT PIE 8 or more Servings 4 eggs 3 tbsp. butter 2 c. milk Pinch salt 1/2 c. Bisquick (baking mix) (I'm cutting this back next time) 1 1/4 c. Splenda 2 tsp. vanilla 3/4 c. sugar free coconut (I used fine macaroon type) NOTE: Do not put coconut in blender. Stir in afterwards.
Put everything except coconut into blender and whirl until smooth. Add coconut and hand mix into batter. Spray 9" pie plate with release agent. Pour and bake at 350 degrees for 45-50 minutes or until custard in center is firm.
I have no points or anything on this recipe. Wait until it's is nice and cold before cutting. CoolWhip was good on top. This is rich and you don't need a very large piece to be satisfied.
