STRAWBERRY YOGHURT MUFFINS INGREDIENTS 120g Margarine 120g Sugar 2 Eggs 150g Strawberry yoghurt 70ml Milk 170g Fresh strawberries, chopped 1 large Lemon, juice and rind 280g Self-raising flour METHOD 1. Preheat oven to 180c. 2. Blend the margarine & sugar & beat in the eggs & yoghurt & milk. 3. Fold in the chopped strawberries, lemon juice & rind. 4. Very carefully fold in the flour to avoid squashing the fruit. 5. Spoon into Muffin cases and bake for about 20 mins, longer if frozen fruit is used. Variations: Any fresh berry fruit may be substituted for the strawberries (raspberries, blackberries, blackcurrants, elderberries or blueberries - omit lemon if using tart fruit).
