BARBO'S CREAMY TORTILLA CASSEROLE
4 each Olafson's Tortillas -- 8" 10 1/2 oz cream of chicken soup, condensed 3 tbsp salsa 6 large black olives 4 oz cheddar cheese, lowfat 1 small tomato -- large dice 4 1/2 oz green chiles dash cumin powder & black pepper 6 oz boned and skinned chicken breast halves -- cooked & sliced
Lay two tortillas in bottom of prepared dish. Mix soup with salsa and green chili, pour half over tortillas, sprinkle with half the cheese, olives and tomatoes. Layer once again ending with cheese. Sprinkle with Mexican seasoning, garlic powder, black pepper and tomato. Pour 1/2 over tortillas, sprinkle with half the cheese, olives, green chili, tomatoes. Layer again. Bake covered lightly with aluminum foil for about 45 minutes. Let stand for a few minutes.

You can add shredded lettuce with tomato, cilantro and green onion on top of each serving for a huge meal. No added points.
