GREEK SHRIMP
1 lb. large peeled and deveined shrimp (40) Costco Roasted garlic olive oil 2 t. chopped garlic (from jar) Crushed red pepper flakes (just a pinch unless you like SPICY) Greek seasoning (I use Penzeys) 1 can ready-cut tomatoes, drained Juice of 1 lemon Crumbled Feta cheese (used reduced fat sundried tomato/basil)
Heat olive oil in large sauté pan. Add about ¾ of the garlic and some crushed red pepper flakes. Sauté for about 1 minute. Add shrimp, season with Greek seasoning, and more crushed pepper flakes. Let sit in hot pan to sear for 1 minute then turn and sauté until shrimp is just pink. Remove shrimp to bowl. Add tomatoes to pan, with the remainder of the garlic, and a bit more red pepper flakes. Stir and scrape any bits off of bottom of pan. When tomatoes are heated, put shrimp mixture back in pan and pour lemon juice over all. Heat for a few seconds to reheat shrimp but DO NOT overcook. Scatter feta cheese over shrimp on plate or in serving dish.
Served with spaghetti squash, rice or pasta.
