This was so easy and good that J. wanted to know if we could have it again tomorrow. Wow!
Barbo's Quick Gumbo 6 large servings for normal folks ;D Use a soup pot, not a huge one. I had half a roast chicken from CostCo all roasted and I used the breast for the chick cut into very large chunks, was going to put shrimp in last but didn't 2 smokey or any kind of sausage that you like. We had two with apple, mozzerella, and spices. I sliced it into rounds.
Saute in a bit of evoo/butter: 4 celery ribs, sliced medium 1 red bell pepper, sliced 1 medium onion, sliced 4 garlic cloves Add: 1 can of chicken broth 1 can of sugar free diced tomatoes 1/2 bag of sliced okra Dash to taste of Creole seasoning Black pepper.
I added the red pepper last as I didn't want it to get mushy.
Just cooked the whole mess for about 30 minutes. The okra thickens the broth but just to have it a little thicker I added very slowly some Xanthum gum.
We put it over our pho rice frim Miracle Noodle.com
Will be better tomorrow as the flavors meld.

Even better the next day. BTW the Xanthum gum is optional as the okra does a whole lot of thickening naturally. Jay likes his doused with fiery red pepper sauce, not I however.
