CAROL'S RANCH HAND SALAD
1 cup Romaine lettuce -- chopped 1 tablespoon Ranch Dressing 2 ounces cooked ham -- cut in strips 1 ounce cheddar cheese -- shredded 2 eggs -- hard boiled, chopped 1 tablespoon mayonnaise 1/4 cup cucumber -- large dice 1/4 cup fresh tomato -- large dice bacon bits -- for garnish
*-Mash or grate the hard boiled eggs; mix in the mayonnaise; set aside. -Put the chopped Romaine on a salad plate mix with the Ranch dressing. -Add 1/2 the grated cheese, top with the strips of ham & the egg/mayo mixture; sprinkle on remaining cheese. -Sprinkle the diced cucumbers & tomatoes on top of the egg salad. -Garnish with bacon bits. -Serves one @ 6.2 carbs & 29.1 grams protein
