:)Barbo's TNT Fluffy Tapioca Pudding 8 servings
4 C. milk 2 egg yolks, plus 3 egg whites 6 tbs. Minute Tapioca 1/4 tsp. salt 2 tsp. vanilla extract 1 1/4 c. Splenda or to taste (we like it sweet)
Beat eggs whites until foamy, then add 1/4 c. Splenda and beat until you have soft peaks. About 2P per serving.
Mix tapioca with, remaining Splenda, salt and egg yolks in medium sauce pan and let it stand for 5 minutes. Cook over medium heat, stirring constantly until mixture comes up to a full boil. Off heat. Quickly fold in beaten egg white and vanilla and let coo(*covered)for 20 minutes. Stir. Fold in 1 c. sugar free CoolWhip. Spoon into dessert dishes. A dollop of topping is nice. A half a cherry on top is pretty. Store remaining pudding in covered dishes.
*For the creamiest pudding. put plastic wrap over pudding while it is cooling.
