Ooooh la la is this ever good. Barbo's Breakfast/Dessert Bread Pudding 8 servings & 5P each 8 slices white bread (crusts removed) 8 tbs. lite soft cream cheese 4 eggs 1/2 c. egg sub 4 c. milk, heated 1 1/3 c. Splenda, divided 1 tbs. vanilla extract 1/4 tsp. almond extract Dash of salt *1/2 c. of raisins (soak in water to plump) 1 orange, zested and segmented Cinnamon to sprinkle each layer Pam spray a 9x9" baking pan Preheat oven to 350 degrees Spread cream cheese over each slice of bread. Lay 4 slices bread in bottom of pan, dust with cinnamon and some Splenda, repeat with remaining 4 slices of bread. Beat eggs and egg sub with Splenda Add extracts and salt. Heat milk to warm, add egg mixture and beat well. Sprinkle on drained raisins, and orange zest. Add egg/milk mixture and let it all soak in for about 15 minutes. Place pan in a larger pan and place in hot water up half ways. Bake about 25-30 minutes or until custard is set. *If you don't like raisins, you could use chopped, pitted dates. Cut into 8 servings, place 8 orange segments on top of each serving, add a bit of Cool whip Free if desired.
