LUSCIOUS LIME ANGEL SQUARES

1 package sugar-free lime gelatin
1 cup water -- boiling
1 whole angel food cake -- 10 oz - cut 1 in cubed
8 ounces fat-free cream cheese
1/2 cup sugar -- or splenda
2 teaspoons lemon juice
1 teaspoon lemon peel -- i omit this
8 ounces fat free whipped topping cool whip tub 8oz -- or red. fat
dissolve gelatin with boiling water place in refig. for 30-35 mins to cool, and begins to thicken a little
place cake cubes in a sprayed 9x13 pan.
next beat cream cheese till smooth then beat in sugar, lemon juice and peel, add gelatin mixture and beat to combine fold in 2/3 tube cool whip stir till blended spread over cake covering all the cake place in refrig to gel. when serving place small dollip of cool whip on each piece. ( remaining cool whip)
nutrional info according to light & tasty ( april 03) 139 calories,4 gr fat ( 3 saturated fat),8 mg cholestrol, 145 mg sodium,21 gr carb.,trace fiber. 3g protien. W/W is 3 points, diabetic exchange is 1- 1/2 starch and 1 fat. note the original recipe called for red-fat cool whip so nutrtionals are for that.
This was from light & tasty but I used ff cool whip and splenda it was great. I made these for dessert for our Ladies Banquet at church. You could change the jello flavor too. Orange. lemon. berry flavors also you could add some fruit on top of the cake and I bet that would be good too. I may have to do the fruit thing. Jane
