Macadamia Crusted Tilapia Pre-heat oven to 350 Get a large non-stick baking pan and place a nice big lump of butter in it along with 2-3 tbs. olive oil. Get the fat hot
Get out three dishes, one for your crumbs, one for the beaten egg, and one for the crushed macadamia nuts. For crumbs I use a bag of plain pork rinds, onion and garlic powder, coarse black pepper, a dash of creole seasoning and put it all in the food processor and whirl until the crumbs are to your liking. Place it in a freezer bag and keep in freezer until you have use for it.
Pat the fish dry with paper towels. Dip in egg, then crumbs, then macadamia nuts, keep it up until all is used up. By now your fat and your oven should be ready. Lay the fish in the pan, not touching each other and bake at 350 for 10 minutes and turn heat up to 400 degrees and cook another 10 minutes.
We had this with our favorite slaw recipe and some greens from our garden. It is so good. __________________ Barbo
