Low Carb Meatballs and Sauce Erin’s Grandma’s Recipe
2 lbs, 91% lean beef (frozen from CostCo.) 1 c. pork rind bread crumbs (Italian if HC) ¼ c. flax meal 2 eggs ½ head garlic, chopped S. & P. to taste ½ c. Parmesan cheese ¼ to 1/3 c. fresh parsley, chopped Preheat oven to 350 degrees Spray a large baking pan with Pam Lay the meatballs in the pan and bake until brown, turning Once and continue baking.
Sauce: Olive oil Large onion, chopped 1 head of garlic, chopped 12 c. diced tomatoes Large V-8 juice ¼ c. sugar sub (erythritol) sugar for HC
Simmer about 2 hours on low, stirring every once in awhile. Throw in meatballs and simmer for one more hour. 1 c. fresh basil, torn and thrown in after sauce is cooked.
I cooked one spaghetti squash and super drained and squeezed out the juice. Cooked 2 oz. of Dreamfield’s linguine and added it to squash and added a little Olive oil. Put it in casserole added sauce and meatballs. More cheese and baked until bubbly.
