BARBO'S TAMALE NUGGETS
¾ c. cornmeal (4.5 oz.) ½ tsp. salt 1 ½ c. low fat milk-skim milk on CORE One egg beaten, or ¼ c. egg substitute 2 oz. reduced fat cheddar cheese-fat free on CORE
Mix cornmeal, salt and milk together over medium heat stirring constantly until thick. Cool slightly and stir in egg and grated cheese. Drop into simmering chili, or soup. Cover and cook for 20 minutes without peeking.
This yields 12 nuggets @ 1 P each
