Country Garden Soup Cooking for two, Pg 27 by Joanna Lund
What a lovely dream, to sit in the midst of greenery and serve this as part of a light lunch! Whenever I’ve been traveling for days on end. I find myself recalling happy meals in my own country garden and longing for home. Serves 2 (1 1/2 cups)
1 (14 ounce) can Swanson Lower Sodium Fat Free Chicken Broth 1 cup chopped zucchini 1 cup chopped carrots 3/4 cup chopped celery 1/4 cup chopped onion 1/4 teaspoon dried dill weed 1/8 teaspoon black pepper
In a medium saucepan, combine chicken broth, zucchini, carrots, celery, and onion. Stir in dill weed and black pepper. Bring mixture to a boil. Lower heat, cover, and simmer for 10 to 12 minutes or until vegetables are tender, stirring occasionally.
Each serving equals: HE: 3 vegetable, 14 optional calories
60 calories, 0 gm fat, 4 gm protein, 11 gm carbohydrate, 394 mg sodium, 64 mg calcium, 4gm fiber
